Foodie Friday Spinach Feta Wrap

Have you ever tried the egg white wrap from Starbucks? They are my go-to on the road for a low-cal breakfast that is healthy and satisfying but making them at home is SO much better!

Egg white spinach feta wrap:

a take on the Starbucks breakfast wrap

Ingredients

Wrap or tortilla of your choice – I usually use a whole wheat low-cal version from Mission
2 egg whites
Crumbled feta cheese
Washed spinach
Roasted marinated tomatoes from your grocery olive bar

Steps

Separate the egg whites from the yolk and scramble in a bowl. Cut about 4 of the roasted tomatoes into smaller pieces and set aside. Place enough spinach to cover the entire wrap; don’t be afraid to load it on, it will shrink when warmed. Lightly coat a pan (I like to use a pan slightly smaller than the size of the wrap) with non-stick cooking spray. Heat pan and add egg whites. Cook egg whites like you are making an omelet. As eggs are cooking warm the wrap and spinach in the microwave for 30 seconds. When eggs have finished cooking, remove from pan and place the open faced omelet on top of warmed spinach. Top with feta and roasted tomatoes. Roll wrap and place back in pan or in toaster over to seal and slightly toast the surface of the wrap.

When I moved to Seattle in 2010 I bought many Groupons but the one to Community Fitness is by far my best Groupon purchase yet! The environment is comfortable, welcoming and it gave me a sense of community within the city I didn’t know. I was immediately hooked on BODYPUMP but soon tried HIIT and loved the feeling of accomplishment after completing that class. Both HIIT and Tabata quickly became the balance to my strength training. I’ve tried other classes at CFit such as Zumba, Yoga, and Barre but I often find there aren’t enough days my week to get them all in, so I stick to my favorites.

Healthy eating has been a focus of mine since I was an adolescent. Luckily, I come from a family of passionate home cooks and I didn’t fall far from the tree! I am an avid Food and Wine and Bon Appetit reader and the grocery store is my favorite place to shop. Idon’t typically followrecipes exactly nor do I have recipes for what I cook. I get inspired by something I read, see or eat and create my own version. We are spoiled in the fresh offerings the PNW has to offer and it makes eating healthy easy,simple and amazingly tasty. Being able to share some of my recipes with CFit allows mean outlet for my true passion which is a nice alternative to my daily scientific life as a medical device engineer.
